EASY COCONUT FLAN
- 6 eggs
- 1 (14 oz) sweetened condensed milk
- 1 (12 oz) can evaporated milk
- 1 (15oz) can coconut milk
- 1 ½ cups whole milk
- 1 teaspoon vanilla extract
- ½ cup shredded coconut (optional
- 1 cup sugar
Preheat oven to 350
Place sugar in a nonstick skillet and slowly melt over low heat without stirring. Shake the pan with the handle but do not mix. When sugar has melted pour into a 3 qt baking dish. Spray the bottom with pam.
In large bowl blend the eggs then add the liquid ingredients. Stir in ¼ cup of coconut
for texture.(optional) Save the rest to sprinkle on top when finished cooking. Pour into pan. Place pan in a larger dish with 1 inch of water in the bottom. Bake for 1 hour. Toothpick needs to come out clean.
To serve, run a knife around the edges to loosen the flan. Then invert onto serving platter.
Sprinkle remaining coconut, on top , if you choose.
