DANISH DONUT / ROUND PANCAKE
REQUIRES AEBLESKIVER PAN
- 2 CUPS FLOUR
- 2 TBLS SUGAR
- 1 TSP BAKING SODA
- 1 TSP CARDAMON
- ¾ TSP SALT
- 1 CUP SOUR CREAM
- 2/3 CUPS MILK
- 3 EGG YOLKS ( SAVE THE EGG WHITES)
- 2 TBLS MELTED BUTTER
MIX DRY INGREDIENTS TOGETHER,ADD ALL LIQUIDS AND BLEND WELL, BEAT 3 EGG WHITES, UNTIL STIFF, FOLD INTO MIXTURE
PREHEAT AEBLESKIVER PAN IN OVEN @ 350 F
ADD ½ TSP OIL TO EACH CUP, FILL EACH CUP ¾ FULL OF MIXTURE, BAKE UNTIL BROWN ON ONE SIDE, PULL OUT PAN TURN AEBLESKIVER OVER, FINISH BAKING, SPRINKLE WITH POWDERED SUGAR, SERVE WITH JAM’S, JELLIES, OR SYRUP
