Irish Lamb Stew
- 1/4 Cup Oliveoil
- 1 ½ lbs of Lamb Cubed
- 6 Garlic Cloves, minced
- 6 Cups Beef Broth
- 1 Cup Guinness Beer
- 1 Cup Red Wine
- 2 Tbls Tomato Paste
- 1 Tbls Sugar
- ½ tsp each of marjoram, thyme and rosemary crushed
- 2 bay leaves
Heat Olive oil in large pot. Lightly salt the lamb. In small batches brown the cubed Lamb on all sides.
When all Lamb is cooked add garlic and sauté one minute. Then combine remaining ingredients.
Bring to a boil, reduce heat and simmer for one hour.
While the meat is simmering
Melt 2 tbls of butter in a large sauté pan
- Add one diced medium onion
- 4 to 5 cups chopped potatoes
- 2 to 3 cups of cubed turnips
- 2 cups of sliced carrots
Sauté all the vegetables until Golden Brown on all sides.
Add Vegetables to Lambone hour before serving to finish cooking.
