SMOKED POTATO SALAD
PREPARE GRILL
SOAK 2 CUPS OF WOOD CHIPS IN WATER FOR 1 HOUR AND DRAIN
PREPARE GRILL TO MAINTAIN A TEMPERATURE OF 400 DEGREES
INGREDIENTS
- ¼ CUP OLIVE OIL, DIVIDED
- ½ TSP BLACK PEPPER
- ¼ TSP SALT
- 1.5 LBS SMALL POTATOES
MIX ABOVE INGREDIENTS AND PLACE IN A FOIL PAN ON THE BBQ.
COOK 30 MINUTES OR UNTIL SOFT
DRESSING
WHILE POTATOES ARE COOKING, MIX THE FOLLOWING
- 1/3 CUP SLICED KALAMATA OLIVES
- 2 THIN SLICED GREEN ONIONS
- 2 TBLS CILANTRO
- 1 TBLS RED WINE VINEGAR
- 2 TSP CELERY SEED
- 1 TSP DIJON MUSTARD
WHISK TOGETHER
DRIZZLE OVER POTATOES WHEN THEY ARE COOKED & SERVE
