SMOKED POTATO SALAD

 

PREPARE GRILL

SOAK 2 CUPS OF WOOD CHIPS IN WATER FOR 1 HOUR AND DRAIN

PREPARE GRILL TO MAINTAIN A TEMPERATURE OF 400 DEGREES

 

INGREDIENTS

  • ¼ CUP OLIVE OIL, DIVIDED
  • ½ TSP BLACK PEPPER
  • ¼ TSP SALT
  • 1.5 LBS SMALL POTATOES

 

MIX ABOVE INGREDIENTS AND PLACE IN A FOIL PAN ON THE BBQ.

COOK 30 MINUTES OR UNTIL SOFT

 

DRESSING

WHILE POTATOES ARE COOKING, MIX THE FOLLOWING

  • 1/3 CUP SLICED KALAMATA OLIVES
  • 2 THIN SLICED GREEN ONIONS
  • 2 TBLS CILANTRO
  • 1 TBLS RED WINE VINEGAR
  • 2 TSP CELERY SEED
  • 1 TSP DIJON MUSTARD

WHISK TOGETHER

 

DRIZZLE OVER POTATOES WHEN THEY ARE COOKED & SERVE
