MOM’S LASAGNA – MODERNIZED

 

INGREDIENTS

 

1 box lasagna noodles

1 large 8oz can whole Italian tomatoes

1 large 8oz can + one .15 OZ can diced or crushed Italian tomatoes

6 sausage links Italian (sweet or spicy)

1 quart of ricotta cheese

2 eggs

1 bag spinach chopped

2 Garlic Cloves chopped

1 carrot diced

1 celery stalk diced

½ onion diced fine

2 packages of basil - diced

1 cup sliced mushrooms

1 - 16 oz. ball of Mozzarella shredded

1 cup parmesan cheese shredded

 1 tsp Garlic powder

1 tsp Italian Seasoning mix

¼ tsp Cayenne pepper

1 tbls Brown Sugar

Salt & Pepper to taste

 

Start water in a pot to cook Lasagna noodles

 

Heat additional pot, add a little olive oil 1 tbls

When pan is hot add carrots, celery, garlic & half of diced onion

After its translucent add mushrooms cook down.

Then add 3 cans tomatoes, dry seasoning, and chopped basil. Let simmer

 

In another pan, sauté sausage, I usually remove the casing

 

In another bowl mix ricotta, remaining diced onions, chopped

Spinach, 2 eggs, garlic, salt & pepper to taste.

 

Shred the mozzarella

 

Take a large baking dish 10 x 13, add a small amount of sauce to the bottom

Then starting layering the above ingredients.

Noodles, sausage, ricotta mixture, sauce, Mozzarella & Parmesan

Repeat until ingredients are gone. Finish with Sauce & cheese.

Bake at 350 for 1 to 1.5 hour.  Let rest before serving
